Ingredients
- 1 cup cassava flour (roughly)
- 2 eggs
- 1/4 cup milk
- pinch of salt
- 2 tbsp water
- sourdough starter (can do without)
- collagen powder or gelatin (optional)
Instructions
- Leave over night unless you don't use starter then you can use straight away.
- Pan fry in butter.
- Serve with ricotta or cream and strawberry jam.
Notes
This is eaten by the Yakutia people in winter to maintain body temperatures and aid metabolism in the mornings where it can be up to -40 degrees. What a delicious breakfast dont you think? The protein from the eggs, milk and collagen balance the starchy carbohydrate of the flour in terms of insulin spike.
